Beginner's Guide: How to Taste Baijiu

If it's you first time ever having Baijiu, it's always good to read this. Tasting baijiu is a sensory experience that involves observing its appearance, aroma, flavour, and aftertaste.

1. Look

Start by examining the baijiu in your glass. It is typically clear and transparent, similar to water, with no visible impurities. Swirl it gently and observe the legs (or “tears”) that form on the glass, which can hint at its alcohol content and texture.

 

2. Smell

Bring the glass to your nose and take a light sniff. Baijiu has a powerful aroma, so avoid inhaling too deeply at first. Depending on the style, you may notice fruity, floral, earthy, or even savoury notes.


3.Taste:

Take a small sip and let it coat your mouth. Baijiu is usually strong, so sip slowly. Pay attention to the balance of flavours, including sweetness, acidity, umami, and alcohol warmth. Different varieties can range from light and delicate to bold and intense.

 

4. Finish:

After swallowing, notice the lingering flavours. A good baijiu will have a smooth, lasting finish with evolving notes that stay on the palate. The aftertaste can be clean, warming, and complex.
