What is Huangjiu? Chinese Rice Wine Intro

Huangjiu (黄酒) is one of the oldest traditional fermented wines in China. It is made from grains such as rice, glutinous rice, or millet through a natural fermentation process.

With a history of more than 3,000 years, Huangjiu has been deeply integrated into Chinese food culture, daily life, and traditional ceremonies.

 

A wine born from natural fermentation

Huangjiu is produced using a traditional brewing method that relies on natural microbial fermentation.

The basic process includes:

  • Steaming selected grains
  • Adding a fermentation starter called “Qu”
  • Natural saccharification and fermentation
  • Pressing and filtering
